Ingredients

3-4 Cups plain non-dairy milk (almond, cashew, coconut)
2/3 – 1 Cup of raw, soaked cashews
1 probiotic capsule (you will be using the powder only)
¼ cup of agave nectar, maple syrup, or honey

1-2 tsp vanilla (optional)

 

Directions

  1. When making raw foods, make sure your all of your instruments are cleaned and sterilized completely
  2. Place 1 cup of your non-dairy milk and cashews in your Vitamix. Blend in the Vitamix until smooth. Cashews should not have any grit. Typically a high powered blender is good for this.
  3. Transfer to a heavy medium sauce pan and stir in the remaining cups of non-dairy milk and the powder inside of the capsule
  4. Over warm/low heat, whisk continuously until the mixture reaches 110 degrees. NO MORE THAN 110 DEGREES
  5. Add the mixture to a clean, sterilized quart mason jar. Let rest in a warm place for 8-12 hours until your desired tartness is achieved
  6. Once you’ve achieved your desired tartness, add agave nectar, maple syrup, or honey
  7. Stir until completely mixed
  8. The yogurt will thicken as it cools
  9. Store covered in a container for 1-2 weeks in the frig
