2 Cups soaked, dried almonds
¾ cups organic raw agave nectar (more or less)
2 tbsp yacon syrup
Dash of salt



  1. Preheat your dehydrator to 145 degrees
  2. In a bowl add almonds
  3. Add agave nectar, salt and yacon syrup.
  4. Stir until completely covered (you may find that you need more or less of agave)
  5. Spread evenly over your dehydrator tray
  6. Dehydrate for ½ hour 145 degrees. Afterward, reduce temp to 105 -110 degrees
  7. Dehydrate for 8 – 12 hours or until dry
  8. Once dry, you might want to prepare a table like this: cover the table you will be working on with either plastic wrap or foil
  9. Place a plastic food-safe bowl on the table. Break the oat nuts over the bowl and place inside. Brush any that fell on the plastic or foil in the bowl
  10. Cover and place either in the frig or can be left out
  11. ‘These nuts’ can be added to mixed nuts, an excellent topping for yogurt, or eaten by itself as a snack
