I love looking for meat alternatives. It’s especially fun when those alternatives are vegetables. That’s because we’re getting our healthy vitamins and minerals.

I tried this sandwich at a restaurant years ago and fell in love. Sometimes, I it was miserable because I would crave it so much and the restaurant where I tried it was not close.

Finally, I tried to make this at home and it was an immediate success.  Here’s your fast, cheap simple healthy recipe for a snack.  This also makes a healthy dinner recipe as well.

2 Portabella Mushroom Caps
Your favorite seasonings
1/4 – 1/2  cup extra virgin olive oil


Coat the Caps with the oil, you may not need to use all of the oil.

Season the caps with your favorite seasonings.

Using your fingers, spread the seasonings over the caps.

Refrigerate for at least 30 minutes, covered. This step is optional.

Grill the caps to your specifications (at least 3-4 minutes per side).

Serve on a bun or in your favorite recipe. The picture shows the sandwich with cheese and pesto.
