The first time I posted this recipe, I realized that I made a grave error.  Ok, well, not really grave but not great taste-wise.  When I make regular salsa, I add just a little sweetener to enhance the flavor, thus, I assumed it wasn’t necessary with the sweetness of mango.  My friends and my conscience let me know I was wrong.  Anyhoo, I decided to add a little agave.  Another fast, simple, healthy recipe to run with.   So, here ya go.


1 mango, sliced or chopped
1/4 red onion
1/2 tomato
1 jalapeno, seeded and halved
1/4 green, red, or yellow pepper
1/4 cup cilantro
TT – Agave nectar or maple syrup
Juice of one lime or lemon, your choice


Add all ingredients to your Vitamix EXCEPT the mango.  Blend until almost pureed.   Add mango and pulse for a rough chop.  Adjust seasoning, chill and enjoy.
