I bought this ingredient in a grocery store once and loved it. However, being the cook that I am I felt that I could do it as well WITHOUT any preservatives. So, I experimented and experimented until I came up with the right texture. This fast, cheap, simple healthy recipe is a great marinade for fish. You can make this in small batches or increase it to your liking.
2 Lemons juiced
3/4 cup extra virgin olive oil
1/2 tsp salt
1/2 tsp ground black pepper
2 tbsp Italian Seasoning
1 sprig fresh parsley (optional)
Place all ingredients in your Vitamix and blend until smooth. Taste and adjust the flavors to your liking. Cover and store in the refrigerator. If chilled, let stand to room temp.
Use this marinade for chicken, fish, or vegetables.
