I was at a restaurant when I had an amazing honey mustard dressing.  I found myself craving it when I wasn’t at the restaurant.  I had to have it.  So, I began to experiment with honey mustard dressing recipes that was similar to the one that I had while dining out.  Finally, I struck gold.  

You know you hit it when your finicky eating children actually like it.  So, here ya go:

Ingredients

  •  ½ cup lemon juice
  •  ¼ cup apple cider vinegar
  •  1 ¾ cup of honey
  •  1 ¼ cup Spicy Brown Mustard or Dijon Mustard
  •  2 tbsp sea salt
  •  2 cloves of garlic, minced
  •  Black Pepper TT
  •  1 ¾ cup extra virgin olive oil

Directions

Cooked Version (this version brings all of the flavors out slightly better and faster in my opinion)

 

  1. In a medium sauce pan combine all ingredients EXCEPT the extra virgin olive oil
  2. Cook over low heat, whisking constantly, until and warmed
  3. Transfer to blender
  4. Blend over the low speed while slowly adding the oil in a slow stream to create an emulsification
  5. Transfer to your container and cool uncovered in the frig until completely cooled.  Once the cooling is done, cover and continue to store in your frig.

If Using A Vitamix:

Combine all ingredients EXCEPT the extra virgin olive oil in the blender.  Mix on your Soup Setting.  Once the setting is complete, turn your setting to a medium setting.  Continue blending in your Vitamix while adding the oil in a slow stream to create an emulsification.  Transfer to your container and cool uncovered in the frig until completely cooled.  Once the cooling is done, cover and continue to store in your frig.

UnCooked Version

  1. In your Vitamix combine all ingredients EXCEPT the extra virgin olive oil
  2. Blend over the low speed while slowly adding the oil in a slow stream to create an emulsification
  3. Transfer to your container and place in the frig until you’re ready to use it
