1 cups of date paste

3/8 cup of coconut oil, melted

2 tbsp of vanilla

Dash of salt

4 cups of almond or walnut flour

¼ – ½ cup of cacao powder

¼ – ½ cup of non-dairy milk (I like coconut milk)


1 ½ cup of soaked cashews

¾  cup of non-dairy milk

½ cup agave nectar

¼ – ½ cup cacao powder

2 tsp vanilla

Dash of salt

1 ½ tbsp soy or sunflower lecithin

½ cup coconut oil, melted


For the Cake

Pour the liquid into a cheesecake pan covered with wax paper on the bottom.   Blend the cake ingredients in your Vitamix until very smooth.   

Chill in the refrigerator.  Prepare the mousse.

For the Mousse

Blend all of the ingredients for the mousse in the Vitamix until smooth.  Pour the mousse over the cake.  Chill for at least 2-3 hours.

When removing the cake, run a knife around the edges of the pan.  Enjoy.

There’s a difference between a cheesecake pan and a spring-form pan.  I prefer the cheesecake pan.  However, use whatever you have.
