2 cups of walnuts

8-12 pitted medjool dates, soaked

1/3, plus 2 tsp of cacao powder

1 tsp vanilla

1/8 cup coconut oil, melted

¼ cup agave nectar

¼ tsp salt



Soak dates for about 20 minutes.  Take this time to gather your ingredients.

In your Vitamix, blend nuts and dates until crumbly.   Stop the blender and add the cacao, nectar, vanilla, coconut oil and salt for about a minute.

Spoon the mixture into a prepared pan covered with wax paper.  Chill. 


1 ½ cup of cashews, soaked

1 tbsp of cacao powder

1/8 cup of date paste

¾  cup of filtered water

½ cup agave nectar

1 tsp vanilla

Dash of salt

Blend the cashews and water until smooth in your Vitamix and has the mouth consistency that you like.  

Once the cashew cream is the consistency that you like, add the remaining ingredients.  Blend until smooth and well blended.

Pour the mousse over the cake.  Chill for about 2-3 hours. 

Run a warm knife around the cake.  Cut as desired.
