This is an ultra-healthy vegan ‘Caramel’ sauce. The ingredients inside are totally body friendly.
1 cup Sunflower Butter (room temp)
¼ tsp Salt
2 tbsp Yacon Butter
¾ cup Raw Organic Agave Syrup (it’s less processed than regular agave syrup)
½ to ¾ cup of your favorite ‘room temp’ non-dairy milk (I used coconut milk)
1 tsp Vanilla
¼ cup of coconut oil
Apples, washed and dried
Crushed nuts, if desired
Place ingredients in a bowl and whisk – no blender needed unless you want to use it – and VIOLA. You have a super healthy caramel sauce that you can use in place of regular caramel. Feel free to tweak it to your liking and specifications. This sauce is kinda thick, so if you want to use it for coffee, thin it out a bit with a little more non-dairy milk.
This is a good dip for my apples. Insert sticks inside of apples. Dip the apple inside of the sauce. Roll apples in nuts. Place apples on waxed paper. Place in the refrigerator for a few minutes so the sauce can harden up a bit. Enjoy.
Nutritional Value of Yacon
As mentioned, yacon tubers are mostly composed of fructooligosaccharides and water. This means that the majority of the carbohydrate sugars cannot be digested by the body, resulting in a very low-calorie level and a prevention of excess sugar coming into the bloodstream. Yacon also helps the body increase its vitamin and mineral absorption of all other foods, so while there aren’t many vitamins and minerals in yacon itself, it is very important for the intake of these essential components of human health. That being said, yacon is still rich in potassium, calcium, and phosphorous.
